No Bake Cookies from greenereating.com


These taste exactly like the real thing! You would never know there are beans instead of butter in them.

Combine in bowl and set aside:
4 1/2 c oats
1/2 c peanut butter (i use the sugar-less kind)
1 T vanilla
Combine in saucepan:
2 1/2 c evaporated cane juice
2 T cocoa powder
1/2 c soy milk or rice milk
1/2 c mashed white beans (about half a can)
Bring to a boil, stirring occassionally, then boil for 1 min constantly stirring. Pour over oat mixture. Scoop onto cookie sheet and let cool.
* I didn't have evap. cane juice so I just used sugar which I think could be drastically reduced. Also stir in some coconut at the end if you want!
