Get Sprouting!

Sprouts are some of the most nutrition dense foods. All the life of the plant is contained in the seed and is brought to life in a few days by watering and draining. Here are some nutritional stats on sprouts: Contain: Vitamins A, B, C, D, E and K, Calcium, Carbohydrates, Chlorophyll, Iron, Magnesium, Niacin, Pantothenic Acid, Phosphorus, Potassium, Zinc, All Amino Acids, Trace Elements, and Protein: up to 35%.
Sprouts are easy to make and don't even require a special tray like I have- just a canning jar with holes poked in the lid will work fine. (They just need rinsed and drained every 12 hrs or so.) They are also very inexpensive. A tablespoon of seeds produces A LOT of sprouts. And they are easy to add to your diet when you're juicing, making salad or cooking almost anything. Don't forget sprouts go well beyond leafy greens like alf-alfa. There are beans to sprout, grasses, grains, nuts, and things like garlic and broccoli.
