Tex-Mex Burgers from greenereating.com


I got this recipe from greenereating.com and it really was good! The patties held together nicely so you could even cook them on the outside grill if you wanted.

1 15oz. can cannellini (or great northern) beans, drained and rinsed
1 c. whole wheat bread crumbs
1 4.5 oz. can chopped green chillies
2 green onions, chopped
1 T. egg replacer mixed in 1/4 c. warm water (2 eggs)
1/4 c. cornmeal
lettuce
avocados
salsa
whole wheat buns
Preheat oven to 350 degrees
Place the beans in a medium bowl and mash slightly. Stir well.
Add bread crumbs, green chillies, green onions, and egg replacer mixture. Mix well.
Put cornmeal in a shallow bowl.
Form the mixture into 5-6 patties, each about 1/2 inch thick. Dip each side in cornmeal and place on a non-stick baking sheet.
Bake for 20 minutes, 10 minutes on each side.
To serve, place some shredded lettuce on the bottom bun, put the burger on the lettuce, top with guacamole and salsa.

Southwest Stew by Me


I made up this delicious recipe yesterday. My friend was over and said "It really IS good- I'm having seconds!" It had the perfect amount of spice and flavor along with a creamy texture (minus the cream.) I think the key to the whole recipe is the butternut squash. And that feeling afterwards: being full. Full of real, nutrient dense food. It's a good life...

4/5 medium red potatoes
1 med/small butternut squash
a little olive oil
1 med onion, chopped
1 can corn
1 can diced tomatoes w/ green chilies
1 can vegetable broth
3 Tbl butter substitute (I use a smart balance organic blend of heart healthy oils)
dash of salt, pepper, and crushed red pepper

Boil potatoes and slightly mash (don't over mash! will get "gluey"). Cook butternut squash (I cut it lengthwise, put if face down in a pan with 1 inch water in it and microwave for 10-15 mins). Sautee onion in a little olive oil in a big saucepan. Add all ingredients (scoop squash right out of the skin into the soup) Add more or less crushed red pepper to taste. Enjoy!

Ginger Teriyaki Veggie Cakes by Me

Ingredients:
brown rice, cooked (about 3 cups)
carrots, diced and partially cooked

edamame (soybeans) (i got them shelled, frozen), partially cooked

red pepper, diced

bok choy, diced

water chestnuts, diced

a small onion, diced

pineapple, diced

a little bit of ginger, grated (or you could use dried)

teriyaki (I used a Kikkoman teriyaki glaze)

egg replacer (1 T ground flax seed + 3 T water)
Put your diced ingredients (except for the pineapple) in a skillet and sautee till everything is soft. I had to microwave my frozen soybeans and carrots (maybe I will just grate the carrots next time so they don't need pre-cooked) Stir into rice. Stir in egg replacer, pineapple, teriyaki and ginger. Form into patties and cook in the skillet 3 mins on each side with the lid on. I formed patties and put them in the freezer for whenever I need something quick to eat! I just take them out frozen and put them on the hot skillet. serve with a little soy sauce on top.

Black Bean Burgers by Me




This has been my favorite recipe so far.

1 can black beans
1 onion, chopped
½ red pepper, chopped
½ can diced tomatoes with chilies (I do mild for my kids)
½ can corn

Egg replacer or some kind (1 T ground flax seeds plus 3 T water.  Soak for a minute)
Bread crumbs or oatmeal

Mash the black beans. Sautee the other ingredients. Combine and add egg replacer and enough bread crumbs/oatmeal till desired consistency is reached.  Press into patties. Cook in a little oil in the fry pan. (Just put them in and leave them till they are getting black. Don’t keep moving them because they’ll fall apart) Serve on toasted whole grain bread with a little ketchup
